Red velvet cupcakes with cream cheese frosting

These cupcakes was baked by Farhanah and the frosting too. I kat sebelah macam cikgu gitu...jeling-jeling dan tegurkan mana yang tak betul....:) Alhamdulillah jadi lembut dan gebu. For the recipe, she use the recipe from here...


Red Velvet Cupcakes with Cream Cheese Frosting

Ingredients

  • 1 1/2 cups of sugar
  • 1/2 cup (1 stick) of butter, room temperature
  • 2 eggs, room temperature
  • 2 1/3 cups of cake flour
  • 2 tablespoons of Dutch-processed cocoa powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of buttermilk*
  • 1 1/2 tablespoons of red food coloring
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of distilled white vinegar

Frosting ingredients

  • 1/2 cup of butter (1 stick), room temperature
  • 8 oz of Philly cream cheese (1 package), room temperature
  • 2 - 3 cups of powdered sugar
  • 1 teaspoon of vanilla extract

*You can make your own buttermilk by adding a tablespoon of distilled white vinegar to milk and letting it stand for about 10 minutes.

Method

The cupcakes

1 Preheat the oven to 350°F. Beat the butter and sugar in an electric mixer for 3 minutes on medium speed until light and fluffy.

2 Add the eggs, one at a time, beating until each is fully incorporated. Be sure to scrape down the sides of the bowl to ensure even mixing.

3 In a large bowl, sift together the cake flour, cocoa powder, baking soda, baking powder, and salt. In another bowl whisk together the buttermilk, vinegar, vanilla extract, and red food coloring.

4 Add a fourth of the dry ingredients and mix, then add a third of the wet. Continue adding in a dry, wet, dry pattern, ending with the dry ingredients.

5 Scoop into cupcake papers, about 1/2 to 3/4 of the way full. Bake for 18-22 minutes or until a toothpick comes out clean. Rotate the pan after the first 15 minutes of baking to ensure even baking.

6 Allow to cool for one minute in the pan then transfer to a wire rack to cool completely.

The Frosting

1 Cream the butter and cream cheese together, about 3 minutes. Scrape down the sides and bottom of the bowl to ensure even mixing.

2 Add the vanilla extract and mix.

3 Add the powdered sugar, continually taste to get to desired sweetness. Pipe onto cooled cupcakes.

Pavlova

Hubby's all time favourite....


Pavlova (source Allrecipes.com)

  • 4 egg whites
  • 1 1/4 cups white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
  • 1 pint heavy cream (I use whipping cream)
  • strawberries & blueberries
  1. Pre-heat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper. Draw a 9 inch circle on the parchment paper.
  2. In a large bowl, beat egg whites until stiff but not dry. Gradually add in the sugar, 1 tablespoon at a time, beating well after each addition. Beat until thick and glossy. Overbeaten egg whites lose volume and deflate when folded into other ingredients. Be absolutely sure not a particle of grease or egg yolk gets into the whites. Gently fold in vanilla extract, lemon juice and cornstarch.
  3. Spoon mixture inside the circle drawn on the parchment paper. Working from the center, spread mixture toward the outside edge, building edge slightly. This should leave a slight depression in the center.
  4. Bake for 1 hour. Cool on a wire rack.
  5. In a small bowl beat heavy cream until stiff peaks form; set aside. Remove the paper, and place meringue on a flatserving plate. Fill the center of the meringue with whipped cream, sweetened if desired. Top whipped cream with berries.

Kuih Bingka Ubi Kayu (Kuih bakar ubi)


Baked this kuih last week. Ever post this recipe before but still I copy and paste it here...:)

Kuih Bingka Ubi Kayu

2kg blended tapioca
250g thick coconut milk
50g grated coconut
450g sugar
4 eggs, beaten
2 tsps sago flour (I used 2 tbps tapioca flour)
50g butter (I used ghee)
A few drops of yellow food coluring
a pinch of salt
banana leaf

1. Preheat oven to 170 degree C
2. Squeeze out the liquid from the blended tapioca under running tap water for a few minutes.
3. Combine all the ingredients with the tapioca and mixed well.
4. Grease a baking tin on base and sides. Then line with banana leaf. Pour mixture in to the tray. (I use 10x10 inches)
5. Bake in preheat oven for 20-25 minutes until light brown. Switch to 150 degree C bake for 45-50 minutes further or till cook.
6. Remove from oven and allow cooling for 10 minutes. Unmould kuih and allow kuih to completely cool before cutting.

Biscuit ala-ala popeye

I've been looking for this recipe for a very long time. Fell in love with this biscuit since the very 1st time I ate it at popeye. Have tried quite a few recipe but this was the best but still not as good as popeye.


Ingredients:
1 stick (1/2 cup) unsalted butter
2 1/2 cups all-purpose flour
4 tsp. granulated sugar
4 tsp. baking powder
2 tsp. kosher salt (I use 1tsp normal salt)
1 3/4 cup buttermilk (I use normal full cream milk)



Directions:
Preheat oven to 450F degrees.
Spray an 8-inch square baking dish with nonstick cooking spray.
In a microwave-safe bowl (or you can use the baking dish that you'll be baking these in), melt stick of butter in the microwave.

In a medium bowl, mixed together flour, sugar, baking powder and salt.
Pour in buttermilk.
Stir until loose dough form. Batter will be a bit sticky (if you use normal milk, your dough will be a little bit runny).
Press biscuit dough into baking dish (right on top of the melted butter)

Kek Sponge gula hangus

Bake this cake yesterday for my mum.


Kek Sponge Gula Hangus

450g gula kaster

120g mentega

340ml air

10 biji kuning telur

7 biji putih telur

1/2 sudu makan esen ros (I guna rose water)

1 sudu makan bicarbonate of soda atau potas

260g tepung gandum

1/2 tin susu pekat


Gula digoreng atau dicairkan atas api yang kecil hingga kuning (I kasi dia gelap macam nak buat kek kukus) . kemudian masukkan air dan mentega (part ini berhati-hati ya, I pakai oven glove untuk elakkan percikan gula dan sebaik-baiknya kecilkan api dulu sebelum masukkan air). Kacau hingga rata. Biarkan bancuhan benar-benar sejuk.

Telur, tepung, susu, potas dan esen ros dicampurkan dan gaul rata. (I gunakan electric mixer) Setelah itu masukkan air gula yang telah sejuk dan gaul lagi hingga rata. Sesudah itu baru ditapis dan tuangkan kedalam tin pembakar. Di resepi asal tidak tercatit size tin tapi I guna 10"x10". Kalau nak kek tinggi boleh gunakan 9"x9".

Bakar dengan suhu 160 selama 50 minit -1 jam.

Tin pembakar hendaklah terlebih dalu disapu mentega bawah dan tepinya. Kemudian dialas aluminium foil supaya kek tidak mudah hangus.

Mee bakso

Actually to cook mee bakso ni I just use frozen beef meatball je. For the soup I masak ikut ingredient kuah soto yg biasa je...
