Apam Beras


Ambil resepi dari sini. I buat dalam loyang je....
  • 2 cwn nasi
  • 2 cwn tepung gandum
  • 2 cwn tepung beras
  • 1 cwn brown sugar
  • 3/4 cwn gula
  • 2 1/2 cwn air
  • 1 sudu kecil yis (mauripan)
  • kelapa parut dgn sedikit garam

Cara-cara

  1. blend nasi dan air sehingga hancur.
  2. setelah hancur,campur brown sugar dan gula ke dalamnya dan blend sehingga sebati.
  3. dlm bekas lain,satukan tepung gandum,tepung beras dan yis.
  4. selepas itu,masukkan bahan cecair tadi ke dlm bekas tepung. Kacau sehingga sebati.
  5. perap selama 3 jam.
  6. masukkan dlm acuan kecil dan kukus selama 15 minit..
  7. hidang bersama kelapa yg telah di gaul dengan sedikit garam..siap!

Asam pedas ayam

Ingredients:
1 ekor ayam di potong 12 (dilumurkan dengan kunyit dan garam dan goreng 1/2 masak)
8-10 batang daun kesum
2 biji tomato (belah empat)
3 mangkuk air
1-2 keping asam gelugur
minyak untuk menumis
garam secukup rasa
serbuk perasa (jika suka)


Bahan2 utk dikisar:

10-15 biji cili kering (direndam terlebih dahulu)
2-3 labu bawang besar
3 ulas bawang putih
5 cm kunyit hidup (kunyit serbuk pun boleh)
3 cm halia
3 batang serai
5 cm lengkuas
3 biji buah keras
sedikit belacan


Directions:
1. Panaskan minyak dan tumis bahan kisar hingga garing
2. masukkan ayam dan kacau sebentar
3. masukkan air, asam gelugur dan daun kesum dan biarkan mendidih
4. masukkan garam, serbuk perasa dan tomato didihkan selama lebih kurang 5 minit..dan siap....

Peanut butter oatmeal chocolate chips cookies

This cookies was made by Farhanah with my supervision. It's more to chewy than crispy version.






Peanut butter oatmeal chocolate chips cookies

1/2 cup butter

1/2 cup white sugar
1/3 cup packed brown sugar
1/2 cup peanut butter
1/2 teaspoon vanilla extract
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup rolled oats
1 cup semisweet chocolate chips

Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the butter, white sugar and brown sugar until smooth. Stir in the peanut butter, vanilla and egg until
well blended. Combine the flour, baking soda and salt; stir into the batter just until moistened. Mix in the oats and chocolate chips until
evenly distributed. Drop by tablespoonfuls on to lightly greased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before
transferring to wire racks to cool completely.

Hati masak lada hitam

Sajian untuk hari ini. Resepi di sini


Black pepper liver
(A)
500g liver (beef or chicken), if you use beef liver, sliced but not too thin
2 inches ginger, finely chopped 
2 cloves garlics, finely chopped or pound

Mix liver, ginger and garlic and marinate for 15-20 mins

(B)
1 big red onion, sliced or diced
1 medium size capsicum, diced but not too small
1 bunch spring onion, cut into 1 inch long
2-3 tablespoons black pepper sauce
1 tablespoon freshly crushed black pepper (optional)
salt to taste
2-3 tablespoons cooking oil

Heat oil anf fry the marinated liver for 5 mins or until the colour changed, add in onion and cook for another 3-4 mins before adding black pepper sauce and crushed black pepper. Cook until liver were throughly cooked. Throw in capsicum, spring onion and salt cook for 3-4 mins. Serve.

Dulu pernah juga cuba buat kuih lapis tapi selalu tidak menepati citarasa so bila jengok-jengok ke myresepi, nampak pulak resepi kuih ni semangat pun mulalah berkobar-kobar nak cuba dan kebetulan bahan-bahan pun cukup so dalam hujan lebat semalam I pun mulakanlah project ni dan end product sungguh memuaskan. lembut, kenyal dan sedap...... For the recipe I just copy paste fron here...


Bahan-bahan ( loyang 8x8 / 9x9 inc. )

  • BAHAN A :-
  • 250 g gula pasir (resipi asal 300 g )
  • 200 ml santan pekat (KARA)
  • 250 ml air + 1 sk garam
  • BAHAN B :-
  • 150 g tepung beras
  • 150 g tepung ubi (tapioca flour)
  • 20 g tepung pulut
  • 300 ml santan pekat (KARA)
  • 150 ml air
  • BAHAN C :-
  • beberapa pewarna pilihan
  • 2 helai daun pandan - disimpul

Cara-cara

  1. Bahan2 A dimasak dengan daun pandan hingga gula larut dan biar suam.
  2. Bahan B disatukan dan kacau rata.
  3. Masukkan bahan A ke dalam bahan B dan tapis.Bahagikan adunan kepada beberapa bahagian dan warnakan ikut suka.
  4. Kukus adunan selapis2 berselang-seli warna pilihan, 5 min tiap lapis dan 10 min untuk lapisan terakhir.Biar kuih sejuk di dalam loyang sebelum dipotong.

Brownies



Ingredients

  • 3/4 cup butter, melted
  • 1 1/2 cups white sugar
  • 1 1/2 teaspoons vanilla extract
  • 3 eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square pan.
  2. In a large bowl, blend melted butter, sugar and vanilla. Beat in eggs one at a time. Combine the flour, cocoa, baking powder and salt. Gradually blend into the egg mixture. Spread the batter into the prepared pan.
  3. Bake in preheated oven for 40 to 45 minutes, or until brownies begin to pull away from the sides of the pan. Let brownies cool, then cut into squares. Enjoy!

Asam pedas ikan pari & sayur bayam goreng


Sajian untuk hari ini. Tak ada yang istimewa. Selalunya kalau I masak, biasanya I just use ramuan yang simple-simple je. So for asam pedas ni, I just put these into it...


5 - 6 potong ikan pari

Serai, diketuk

Daun kesum

Air asam jawa


Bahan kisar:-

Bawang besar

Bawang putih

Lada kering

Lada hitam

Sedikit belacan

Sedikit kunyit hidup, kalau kunyit serbuk pun boleh


Tumis bahan kisar hingga wangi (garing or naik minyak)


Masukkan air asam, ikan serai & daun kesum dan masak hingga mendidih. Last masukkan garam secukup rasa.





Untuk Sayur bayam goreng pula I just tumbuk ramuannya guna batu lesung iaitu bawang besar, bawang putih, cili padi (I pakai 1 - 2 batang je) & udang kering yang telah direndam terlebih dulu. So tumislah ramuan tu hingga garing dan masukkan sayur bayam yang dah disiang bersama garam secukup rasa. Kalau terlalu kering tambahkan sedikit air. Actually dengan ramuan ini boleh dimasak dengan sayur jenis lain juga seperti sawi, kobis, kangkung dan banyak lagi lah....

Bancaan (Kenduri doa selamat)



Salam, semalam I buat bancaan sikit untuk birthday Syaiful yg ke-21thn yg jatuh pada 11.11.11 & Aiman yg ke-9thn yg jatuh pada 15.11.11. Selalunya masak nasi minyak tapi kali ini I buat nasi ayam penyet tapi ayam tak penyek pun. So untuk sos I buat dua macam...1 sos ayam penyet yang pedas dan 1 lagi sos nasi ayam biasa yang tak berapa pedas supaya budak-budak yang tak cerewet boleh makan. Then ada juga chap cai, sambal fiahball + udang yg tak berapa besar tu dan juga sop bebola daging. My mak brought mee goreng dia yang power tu and my adik brought bubur kacang. Thanks to both of them.



I buat pulut kuning, cupcakes yang dihias oleh Farhanah, brownies, kuih kaswi, hoon kwee jagung dan pizza. Penatnya boleh tahan juga tapi happy sebab segalanya berjalan dengan lancar.




Cuma boring bila rumah macam tongkang pecah, orang setakat tolong ala kadar lepas tu pagi tadi tinggal pergi kerja and I ingat semalam bila dia kata dah cuci benda-benda besar tu...I ingat tinggal yang remeh temehlah utk I kemas...rupa-rupanya....haizz..cakap pun tak guna sebab semua I dah settle sendiri and it take more than half a day to do it. Nasib baik ada Farhanah, living room dia yang kemas....

Moral of the story...lain kali kalau nak kerja on the weekend, jangan buat kenduri....buat susah orang lain.....

Peach Yogurt Butter Cake

Peach Yogurt Butter Cake

Ingredients

  • 100g butter, softened
  • 1 cup white sugar
  • 3 eggs
  • 1 teaspoon lemon extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 100 ml yogurt
  • 1/2 can peach, drained
  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 8x8 inch pan. Put parchment paper at the bottom and sides of pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lemon extract. Alternately beat in the flour mixture and the yogurt, mixing just until incorporated.
  3. Pour batter into a 8x8 inch pan, smooth top of the batter and arrange drained peach. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool 10 minutes in the pan, then turn out onto a wire rack and cool completely.

Pizza...again....


Fresh from the oven....today's dinner I guest.........:) For the recipe it's here. Ok, as you can see that the base was thick that look like a bun rather than pizza crust.....well..... I did that on purpose as the hubby and children like it that way.....:)

Hot Cross Bun

Ingredients

  • 3/4 cup warm water (110 degrees F/45 degrees C)
  • 3 tablespoons butter
  • 1 tablespoon instant powdered milk
  • 1/4 cup white sugar
  • 3/8 teaspoon salt
  • 1 egg
  • 1 egg white
  • 3 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 3/4 cup dried currants
  • 1 teaspoon ground cinnamon
  • 1 egg yolk
  • 2 tablespoons water
  • 1/2 cup confectioners' sugar
  • 1/4 teaspoon vanilla extract
  • 2 teaspoons milk

Directions

  1. Put warm water, butter, skim milk powder, 1/4 cup sugar, salt, egg, egg white, flour, and yeast in bread maker and start on dough program.
  2. When 5 minutes of kneading are left, add currants and cinnamon. Leave in machine till double.
  3. Punch down on floured surface, cover, and let rest 10 minutes.
  4. Shape into 12 balls and place in a greased 9 x 12 inch pan. Cover and let rise in a warm place till double, about 35-40 minutes.
  5. Mix egg yolk and 2 tablespoons water. Brush on balls.
  6. Bake at 375 degrees F (190 degrees C) for 20 minutes. Remove from pan immediately and cool on wire rack.
  7. To make crosses: mix together confectioners' sugar, vanilla, and milk. Brush an X on each cooled bun.

New York Cheesecake

For hubby's birthday.

Ingredients

  • 15 graham crackers, crushed
  • 2 tablespoons butter, melted
  • 4 (8 ounce) packages cream cheese
  • 1 1/2 cups white sugar
  • 3/4 cup milk
  • 4 eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • 1/4 cup all-purpose flour

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
  3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
  4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

Red Velvet Cake


Did this cake for Father's Day last Sunday. Actually this was suppose to be red velvet cake but instead of red colouring paste, I choose to use chocolate emulco ....

Ingredients

  • 2 tablespoons unsweetened cocoa powder
  • 2 ounces red food coloring
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup shortening
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 1/2 cups all-purpose flour, sifted
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon white vinegar

  • Frosting
  • 1 cup milk
  • 5 tablespoons all-purpose flour
  • 1 cup white sugar
  • 1 cup butter
  • 1 teaspoon vanilla extract

Directions

  1. Grease two 9 inch round pans. Preheat oven to 350 degrees F (175 degrees C). Make a paste of cocoa and food coloring. Set aside.
  2. Combine the buttermilk, salt and 1 teaspoon vanilla. Set aside. In a large bowl, cream together the shortening and 1 1/2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the cocoa mixture. Beat in the buttermilk mixture alternately with the flour, mixing just until incorporated. Stir together baking soda and vinegar, then gently fold into the cake batter.
  3. Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting. Refrigerate until ready to serve.
  4. To Make Icing: In a saucepan, combine the milk and 5 tablespoons flour. Cook over low heat, stirring constantly, until mixture thickens. Set aside to cool completely. Cream together butter, 1 cup sugar and 1 teaspoon vanilla until light and fluffy, then stir in the cooled milk and flour mixture, beating until icing reaches spreading consistency.

Chocolate Rice Cupcakes


Chocolate Rice Cupcakes

250g butter, softened
200g caster sugar
250g self-raising flour
1 tsp baking powder
4 eggs
1 tsp vanilla essence
1 cup chocolate rice

Preheat oven to 175 degree C

Place all ingredients except chocolate rice in mixing bowl and beat with an electric mixer until smooth and pale, about 4 to 5 minutes. Fold in chocolate rice with a spatula until just combine.

Spoon mixture into cupcake cases and bake for 20 minutes

Crispy Creamy Doughnut

Ingredients

  • 2 (.25 ounce) envelopes active dry yeast
  • 1/4 cup warm water (105 to 115 degrees)
  • 1 1/2 cups lukewarm milk
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 2 eggs
  • 1/3 cup shortening
  • 5 cups all-purpose flour
  • 1 quart vegetable oil for frying
  • 1/3 cup butter
  • 2 cups confectioners' sugar
  • 1 1/2 teaspoons vanilla
  • 4 tablespoons hot water or as needed

Directions

  1. Sprinkle the yeast over the warm water, and let stand for 5 minutes, or until foamy.
  2. In a large bowl, mix together the yeast mixture, milk, sugar, salt, eggs, shortening, and 2 cups of the flour. Mix for a few minutes at low speed, or stirring with a wooden spoon. Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead for about 5 minutes, or until smooth and elastic. Place the dough into a greased bowl, and cover. Set in a warm place to rise until double. Dough is ready if you touch it, and the indention remains.
  3. Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double. Cover loosely with a cloth.
  4. Melt butter in a saucepan over medium heat. Stir in confectioners' sugar and vanilla until smooth. Remove from heat, and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery. Set aside.
  5. Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the glaze while still hot, and set onto wire racks to drain off excess. Keep a cookie sheet or tray under racks for easier clean up.

Kuih Kaswi

Bahan-bahan ( Loyang bulat 30cm )
  • BAHAN A :-)
  • 350 g gula melaka (mat guna 300 g)
  • 240 g gula pasir
  • 450 ml air
  • 2 helai daun pandan, disiat dan simpul
  • BAHAN B :-)
  • 190 g tepung gandum*
  • 120 g tepung ubi*
  • 60 g tepung beras*(*disatukan dan diayak)
  • 900 ml air
  • 2 camca besar air abu (alkaline water)
  • 3/4 camca besar air kapur
  • 1 camca besar pewarna coklat
  • BAHAN C :-)
  • 1 cawan kelapa parut putih
  • Secubit garam

  1. Satukan bahan2 A dan masak atas api sederhana hingga semua larut. Sejukkan.

  2. Satukan bahan2 B dalam satu bekas. Kacau rata dengan wisk.

  3. Satukan no1 dan no2. Kacau rata dan tapis ke dalam loyang yang telah disapu dengan sedikit minyak masak.

  4. Kukus 40 - 45 minit atas air mendidih. Balut tutup kukus dgn kitchen towel. Jika lepas 45 minit terdapat air pada permukaan kuih. Letakkan paper towel (yg baru) dan biar ia terserap. Angkat perlahan hingga kering. Biarkan sejuk betul sebelum dipotong dan hidangkan bersama bahan C

Blonde Brownies

Blonde Brownies (By Allrecipe)

  • 1 cup sifted all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1/3 cup butter
  • 1 cup packed brown sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 2/3 cup semisweet chocolate chips

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. Measure 1 cup sifted flour. Add baking powder, baking soda, and salt. Sift again. Add 1/2 cup chopped nuts. Mix well and set aside.
  3. Melt 1/3 cup butter. Add 1 cup firmly packed brown sugar and mix well. If shortening is used, add 1 tablespoon hot water. Cool slightly.
  4. Add egg (beaten) and vanilla. Blend well. Add flour mixture, a little at a time, mixing well.
  5. Spread in 9 x 9 x 2 inch pan. Sprinkle 1/2 to 1 cup chocolate chips on top. Bake for 20 to 25 minutes.
