Scottish Oat Scones


Bake this scones last Friday. It's quite heavy and quite filling, best eaten when warm and ideal for breakfast.

  • 1 1/2 cups all-purpose flour
  • 2 cups rolled oats
  • 1/4 cup white sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dried currants(raisins)
  • 1 egg, beaten
  • 1/2 cup butter, melted
  • 1/3 cup milk

  1. Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
  2. In a large bowl, mix the flour, oats, sugar, baking powder, salt, and currants. Make a well in the center. In a small bowl, beat egg until frothy, and stir in melted butter and milk. Pour into the well, and mix to create a soft dough. Pat dough into two 1/2 inch thick circles. Place on the prepared baking sheet. Score 8 wedges into each circle of dough.
  3. Bake 15 minutes in the preheated oven, until risen and browned. Split wedges, and serve warm.

Banana Muffins


Mengidam dah lama tapi baru semalam berkesempatan nak buat. resepi I ambil dari "allrecipes".

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large bananas, mashed
  • 3/4 cup white sugar
  • 1 egg
  • 1/3 cup butter, melted

  1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
  2. Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
  3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped

Portuguese egg tarts


Make this last weekend, I got this recipe from "allrecipes", quite ok but a little bit too sweet for my taste. So if you want it to be less sweet, reduce the sugar amount.

  • 1 cup milk
  • 3 tablespoons cornstarch
  • 1/2 vanilla bean
  • 1 cup white sugar
  • 6 egg yolks
  • 1 (17.5 ounce) package frozen puff pastry, thawed

  1. Preheat oven to 375 degrees F (190 degrees C.) Lightly grease 12 muffin cups and line bottom and sides with puff pastry.
  2. In a saucepan, combine milk, cornstarch, sugar and vanilla. Cook, stirring constantly, until mixture thickens. Place egg yolks in a medium bowl. Slowly whisk 1/2 cup of hot milk mixture into egg yolks. Gradually add egg yolk mixture back to remaining milk mixture, whisking constantly. Cook, stirring constantly, for 5 minutes, or until thickened. Remove vanilla bean.
  3. Fill pastry-lined muffin cups with mixture and bake in preheated oven for 20 minutes, or until crust is golden brown and filling is lightly browned on top

Butter rolls & Sup ekor lembu

Salam, today hubby not working, he took urgent leave. Still not feeling well since last week. Since he's home, I've decided to cook 'Sup ekor lembu' and butter rolls to go with it. Actually I've already posted recipe for the soup but I'll copy & paste......




Sup Ekor Lembu

1 kg ekor lembu, direbus hingga empuk (kita gunakan pressure cooker jadi cepat sikit)
1 labu bawang besar, dikisar
2 ulas bawang putih, dikisar
1 inci halia, dikisar
2 kuntum bunga lawang
4 biji pelaga
1/2 cawan oats
2 sudu makan rempah sup
4 batang celery, potong dadu
2 biji kentang, sebiji dibelah 4
2 batang carrot, dipotong kecil2
2 biji tomato, dibelah 4
garam
lada putih serbuk

Panaskan minyak dan tumiskan bunga lawang dan pelag
a. Masukkan bahan-bahan yang telah dikisar tadi hingga garing. Masukkan ekor lembu bersama air rebusannya sekali dan biarkan mendidih sebentar. Masukkan rempah sup dan oats dan kacau hingga sebati dan masukkan kentang, carrot dan celery masak hingga kentang empuk. Masukkan garam dan lada putih. Jika terlalu pekat tambahkan air, last sekali masukkan tomato.


Butter Rolls (source: allrecipes)

  • 2 1/2 cups warm milk
  • 4 teaspoons active dry yeast
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup butter, softened
  • 2 teaspoons salt
  • 7 cups all-purpose flour, or as needed
  • 1/2 cup butter, melted

Directions

  1. Pour milk into a large mixing bowl, and sprinkle yeast over the surface. Allow to rest for 5 minutes. Beat in the sugar, eggs, 1/2 cup butter, and salt; blend thoroughly. Gradually stir in the flour to make a soft dough. Cover bowl, and set in a warm place until dough doubles in size, about 1 hour.
  2. Punch down the dough, cover the bowl, and allow to rise again. Repeat this step two more times.
  3. Break off 2 to 3 inch size pieces of dough, roll lightly into round shape, and place in prepared baking dish, edges touching. Repeat to make 36 dough balls. Cover and let rise until doubled in size.
  4. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  5. Bake rolls in preheated oven until tops turn golden brown, 10 to 15 minutes. When rolls are finished baking, drizzle melted butter over the top, and serve warm.

No title...

Salam, these few days I rasa malas je....nak buat apa2 pun asyik tertangguh je....Guilty conscious often creeps upon me for not being a good mother at this point of time. Aiman asyik tanya bila I nak start jahitkan pyjama untuk dia which I've promised to him way before ramadhan lagi.....Hmm..I pun sendiri tertanya bilalah I nak start buatkan dia....Apa2 pun, walaupun malas, masak tetap going on as normal. These few days hubby tak berapa sihat so bila masak tu...I kenalah masak ikut selera tekak dia tapi tak lupa juga untuk anak2. Normally if hubby is sick, he always prefer to eat soup or porridge which is not to the liking of the kids. Anak2 ni semua suka makan yang pedas2 so when I cooked vegetable soup for ayah, for them I cooked ikan sambal and when I cooked porridge, then it's pasta (yang pedas tau) for them....everybody pun happy kan...layanlah gambar2 kat bawah ni....

Cheese and Garlic Scones (2)


One of my children favourite snacks. Ever post this recipe before but this time I use parmesan cheese instead of cheddar and it taste much more better.


Cheese and Garlic Scones
Ingredients:
2 cups self-rising flour
2 tablespoons (60g) butter
1 cup shredded cheddar cheese (or parmesan)
1 teaspoon mince garlic (add more if you like or omit it if you don't)
1 cup milk



Directions:
1. Preheat oven to 425 degree F (220 degree c).

2. In a large bowl, sift flour. Rub in butter lightly with finger tips until until mixture resembles coarse breadcrumbs. Mix in garlic and cheese. Make a well in the centre of the mixture and pour in the milk. Gently mix, just until combined. knead briefly and lightly. Do not over knead the dough. Divide the dough into two balls.

3. Onto lightly floured board, pressed dough using your hand to form into 1 inch thick round and cut into 8 wedges. Place on lightly greased baking tins.

4. Bake for 15 to 20 minutes or until light brown.

Tahu Goreng



Buat tahu goreng for my hubby. oleh kerana pada ketika itu penyakit 'M' dah melanda....I guna kuah kacang instant je....hehehe




Kuih Bingka Ubi Kayu


Make these kuih last week. Resepi I ambil dari buku 'Delicious Nyonya Kueh & Desserts' by Patricia Lee. Actually I pernah post the same kuih but from different recipe book and personally I rasa it's much more simpler and easier using this recipe and the taste...I rasa sama je....


Kuih Bingka Ubi Kayu

2kg blended tapioca
250g thick coconut milk
50g grated coconut
450g sugar
4 eggs, beaten
2 tsps sago flour (I used 2 tbps tapioca flour)
50g butter (I used ghee)
A few drops of yellow food coluring
a pinch of salt
banana leaf

1. Preheat oven to 170 degree C
2. Squeeze out the liquid from the blended tapioca under running tap water for a few minutes.
3. Combine all the ingredients with the tapioca and mixed well.
4. Grease a baking tin on base and sides. Then line with banana leaf. Pour mixture in to the tray. (I use 10x10 inches)
5. Bake in preheat oven for 20-25 minutes until light brown. Switch to 150 degree C bake for 45-50 minutes further or till cook.
6. Remove from oven and allow cooling for 10 minutes. Unmould kuih and allow kuih to completely cool before cutting.

Cupcakes



Make these cupcakes for my nieces and nephews during Aidil Adha. Just a simple butter frosting chocolate cupcakes.....




Hidangan Aidil Adha


Salam, it's been quite sometime that I've not post any entry here. Been quite busy lately :). First and foremost I would like to wish all my muslim friends a very belated "Aidil Adha"...hehehe.
For Aidil Adha ,I would normally prepared a rice dish. Be it nasi minyak, nasi bryani, nasi jagung and etc, etc, etc. So this year I masak nasi tomato and the lauk2 were ayam kurma, daging kicap, udang cili and acar timun. I masak 5kg of beras basmati you...sebabnya my mak and mil masak ketupat..so I told them to masak lauk pauk lebih2 and I akan bawak nasi banyak2 for them. Out of 5kg of rice, I took one small pot for my own family and the rest were divided into two container for my two extended families with some lauk.

Mee Rebus


Mee rebus...dah lama betul I tak masak mee rebus...bukan apa..asyik nak try resepi baru je so resepi lama pun dilupakan....hehehe...so bila duduk memikirkan apa nak masak hari ini ya....teringatlah pulak yang dah lama I tak masak mee rebus.... Apalagi terus bersiap...pergi pasar dan beli bahan-bahannya.....

Mee Rebus

(kuah)
2 labu bawang besar
2 ulas bawang putih
1 inci halia
2 sudu makan udang geragau kering, rendam selama 10-15 min & toskan
1 sudu makan taucho
kisar bahan2 diatas dan campurkan dengan 3 sudu makan rempah kari daging
2 - 3 sudu makan kacang tanah goreng yg telah dikisar
2 batang serai, diketuk
200g tetelan, di potong kecil2
2 liter air
4 sudu makan tepung gandum di campur bersama 1 cawan air, kacau hingga sebati & tapis
Garam & gula ikut rasa
sedikit minyak untuk menumis

Panaskan minyak dan tumiskan bahan kisar bersama rempah kari daging hingga pecah minyak.
Masukkan kacang dan serai kacau sebentar. Kemudian masukkan tetel, kacau dan masak selama 5 minit. Tuang air dan dengan api yang agak kecil, biarkan mendidih.
Tambahkan garam & gula, kacau dan akhir sekali, kecilkan api dan tuangkan campuran tepung tadi sambil kacau kuah hingga pekat sedikit...dan biarkan mendidih....

50 sen taugeh, dicelur
telur rebus

bahan2 taburan
2 keping tahu, digoreng dan potong dadu (I pakai taupok)
daun sup, dihiris
cili hijau, dihiris
limau kasturi, dibelah dua

Hidangkanlah macam biasa.........

Acar 2-in-1



Yesterday I cooked 2-in-1 dish. At first memang tak tahu nak masak apa but what I know walau apa pun, I have to cook my ikan kerapu sebab it's been 2 weeks since I put it in the freezer. So I keluarkan from freezer to let it defrost and still haven't decide what I should do to the fish.
Then open vegetable compartment to see what I have inside.....I saw 1 small cucumber and 1 carrot....then suddenly I thought why not I masak acar? Masak sambal lebih sikit.....half for the cucumber & carrot and the other half for the fish.....hehehe...pandai tak.....sayang I tak ada telur burung puyuh in stock...kalau tak....bestnya......

Black pepper liver and Fried long beans with egg

Semalam I masak black pepper beef liver (can use chicken liver too) and fried long beans with egg...actually both are very simple and easy to prepare. Very ideal if on some days when the laziness melanda....but you still have to cook.......haizzz..........



Black pepper liver
(A)
500g liver (beef or chicken), if you use beef liver, sliced but not too thin
2 inches ginger, finely chopped (I pound use batu lesung)
2 cloves garlics, finely chopped or pound

Mix liver, ginger and garlic and marinate for 15-20 mins

(B)
1 big red onion, sliced or diced
1 medium size capsicum, diced but not too small
1 bunch spring onion, cut into 1 inch long
2-3 tablespoons black pepper sauce
1 tablespoon freshly crushed black pepper (optional)
salt to taste
2-3 tablespoons cooking oil

Heat oil anf fry the marinated liver for 5 mins or until the colour changed, add in onion and cook for another 3-4 mins before adding black pepper sauce and crushed black pepper. Cook until liver were throughly cooked. Throw in capsicum, spring onion and salt cook for 3-4 mins. Serve.



Fried long beans with egg

200g long beans, cut into 1 1-2 inches long
1 medium red onion, sliced
1 clove garlic, chopped
1 red chilli, sliced
1/2 teaspoon turmeric powder (optional)
2 eggs, slightly beaten
salt to taste
1 tablespoon cooking oil

Heat oil and fry onion and garlic for 1-2 mins, add in long beans, chilli, salt and turmeric powder and fry until long beans change to darker green colour and last put in eggs and mix and cook for 2-3 mins.

Cinnamon doughnuts


Yesterday for afternoon tea, I make cinnamon doughtnuts which I used the recipe from '200 bread recipes' book which was given to me by Syaiful & Fana on my last bitrhday. I've been using this recipe quite a numerous times and I'm quite satisfied with the results.

Cinnamon doughnuts(Bread machine recipe)
(A)
1 large egg, beaten
225ml milk
2 teaspoon vanilla extract
25g unsalted butter, softened
1/2 teaspoon salt
450g bread flour
50 caster sugar
1 1/4 teaspoon dry instant yeast

For the finishing
(B)
100g caster sugar (I used brown sugar)
1 teaspoon ground cinnamon
oil, for deep frying

Put in all ingredients (A) in bread pan following the order specified by your BM and put the cycle to dough.
After the cycle completed, roll the dough and cut using doughnut cutter. Leave it to rise for about 30-40 mins or until almost double in size.
Mix together the sugar and cinnamon in a plate.
Fry the doughnuts. Roll the doughnuts in the cinnamon sugar while still warm.

White bread & Chicken soup


It's been raining since morning...hmm..how nice if I can take a nap.......ooppss...Aiman just won't let me....haizzz..........kesian I......
Ok....since today Syaiful & Fana come back from school quite late....I thought of preparing some comfort food for dinner today. Ask hubby and he said maybe soup and bread would be nice....hmm...ok.....so bermulalah project untuk hari ini.... I baked (my bm actually) 2 loaves of white bread and cooked chicken soup...senangnya kerja....




White Bread (source: allrecipes)

Ingredients
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 3 tablespoons white sugar
  • 1 1/2 teaspoons salt
  • 3 tablespoons vegetable oil
  • 3 cups bread flour
  • 2 1/4 teaspoons active dry yeast
Directions
  1. Place water, sugar, salt, oil, bread flour and yeast into pan of bread machine.
  2. Bake on White Bread setting .
  3. Cool on wire racks before slicing.



Chicken Soup

1 chicken (1 - 1.2kg), cut into small pcs
3 medium size potatoes, peeled and and quartered
2 medium size carrots, cut into small pcs
3 - 4 stalks of celery sticks, diced
100gm enoki mushrooms, rinsed
2 medium size tomatoes, quartered
1 large onion, diced
2 cloves of garlic, chopped
1 inch ginger, chopped
1 - 2 star anise & 2 pods of cardamon
2 tablespoon soup powder mixed with some water to make into paste
2 cubes chicken stock (optional)
salt, pepper to taste
1-1/2 litre water or more to suit your taste
1/4 cup cooking oil
Fried shallots for garnishing

Heat oil in stock pot and fry star anise and cardamon for a while and add in onion and fry until soft. Add in garlic and ginger and fry for a while.
Add in soup powder paste and fry until you can smell the fragrance.
Add in chicken and cook for 5 mins. Put in water, potatoes and carrots and leave it to boil.
Add in celery stick , enoki mushroom,chicken cube,salt and pepper and simmer at the lowest heat for 10 - 15 mins. Last but not least, put in tomatoes and switch of the heat.
Garnish with fried shallots before you serve

Ikan kerisi masak lemak taucho


Yesterday, prepared a very simple dish for our meal 'Ikan kerisi masak lemak taucho'....


Ikan Kerisi Masak Lemak Taucho

1 medium size ikan kerisi or seabream, cleaned & cut into a few pcs
1 tsp turmeric powder
1 tsp salt

Mix the fish with turmeric powder and salt and fry until golden brown.

1 large onion, sliced
2 clove of garlic, sliced
1 inch ginger, sliced
2-3 green chillies, sliced (if you like it to be more spicy, add chilli padi)
2 tablespoon crushed taucho (salted bean paste)
1 tsp turmeric powder
1 small pc asam gelugur
100ml coconut milk + 1/2 cup of water
1/4 cup cooking oil

Fry sliced onion in the cooking oil for about 3-4 mins. Add in garlic, ginger and green chillies fry for a little while. Add in crushed taucho and turmeric powder, fry for abut 3-4 mins, add in coconut milk and asam gelugur, cook for another 5 mins. Add in fried fish, cook for 5 mins more and its ready...

Pasta Olio

Yesterday went to Aiman's school for his dental appointment at 2.00pm. Quite a rush as he reach home from school at around 1pm. For his quick lunch before heading back to school, he ate spaghetti olio which I've prepared earlier which was his favourite tops with lots of parmesan cheese....

Pasta Olio (source: allrecipes)

  • 1 pack spaghetti
  • 2 teaspoons chopped garlic
  • 1/4 cup chopped parsley
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup olive oil
  • 1/4 cup melted butter

Directions

  1. In a large pot with boiling salted water cook spaghetti pasta until al dente. Drain.
  2. Meanwhile, in a large skillet over low heat saute garlic, parsley, and red pepper flakes with olive oil . Cook until garlic turns golden in color, about 10 to 15 minutes.
  3. Toss pasta with garlic mixture and butter or margarine. Serve warm.
I made some adjustment to the recipe by adding some sliced hotdog.



For dinner just a simple wraps served with french fries.....

Baked meatballs in alfredo sauce


Yesterday I masak yang simple and easy je....sebab the day before I masak nasi bryani untuk kenduri arwah 100 days my sis-in-law meninggal. Kiranya dah penatlah tu. Masakan yang paling simple tu apalagi kalau bukan pasta and untuk sauce pun I gunakan yang segera je tapi lupalah nak ambil gambar....but I sempat ambil gambar my baked meatballs. Itu pun instant juga. I just use frozen meatballs, Leggos Alfredo sauce and mozarella cheese je...just dump everything into my caserolle and baked at medium heat for about 20 mins.....dah siap....sedap tau..macam kat pizza hut gitu...

Cinnamon Rolls


Buat cinnamon rolls ni masa kita nak pergi rumah mak......

Cinnamon Rolls

3/4 cup milk
* 3/4 cup water
* 1/2 cup white sugar
* 1 teaspoon salt
* 2 eggs
* 5 teaspoons active dry yeast
* 5 cups all-purpose flour
* 1/2 cup margarine, melted
* 2 cup brown sugar
* 5 tablespoon ground cinnamon
* 1/2 cup butter, softened

Directions:
1. In a medium saucepan over medium heat, warm milk, water, sugar and salt. Remove from heat, and mix in the eggs and yeast.
2. Measure flour into a large bowl. Make a well in the flour, and pour milk mixture into it. Do not stir. Cover with a lid, and let stand for 20 to 30 minutes.
3. Pour melted margarine into flour, and mix well. Add more flour if too sticky. Knead lightly. Cover, and let rise for 20 to 30 minutes.
4.After the dough has doubled in size divide into 2 portions turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
5.
Roll dough into a 16x21 inch rectangle. Spread dough with butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
6.
Bake rolls in preheated oven until golden brown, about 15 minutes.

Ketuk/Getuk Ubi


Buat kueh getuk ni last week. Masa tu pergi NTUC Extra, nampak pulak ubi kayu yang dah di kopek kulit dan putih melepak dalam vacuum sealed package. Geram betul kita tengok, sedar tak sedar ubi pun dah ada kat dalam bakul...dalam hati berkata2 nak cuba buat getuk ubilah...sebab kita tak pernah buat kueh ni dan ingredients dia kita agak2 je tak ada sukatan pun...main gasak je....hehehe
