Kuih Bingka Ubi Kayu Ala Nyonya
Tengahari tadi masa kita hantar Aiman pergi klinik, time balik tu lalu kat kedai Dodo sambil tu jeling lah kat esbok dia dan nampak pulak ubi parut.....so apalagilah tanpa fikir panjang kita pun beli lah.....dalam hati dah fikir2 nak buat apa eh.....bingka ubi ke....awol2 ke....kuih talam ubi ke.... So sampai je rumah....kasi Aiman makan ubat.....pas tu apa lagi kita pun carilah resepi. Cari punya cari at last kita decided nak buat bingka ubi.....resepi ni kita ambil dari buku "Nyonya Specialities".
Bahan-bahannya:
1.4kg ubi kayu parut
1 cawan air sejuk
2 3/4 cawan santan
480g gula pasir
3 sudu makan tepung jagung/sago
3 biji telur (di pukul)
1 sudu makan butter, dicairkan
1 1/2 sudu teh vanilla
1 1/2 sudu teh garam
pewarna kuning
Cara-caranya:
1. Panaskan oven pada suhu 175 degrees C
2. Oleskan minyak pada sekeliling dan bawah tin pembakar (9 x 9 x 3) dan alaskan dengan kertas minyak/parchment paper.
3. Campurkan ubi parut dan air sejuk. Gaulkan hingga rata. Kemudian perahkan ubi kayu dengan menggunakan kain muslin dan perapkan airnya selama 1/2 jam. Biarkan sagunya mendap dan perlahan-lahan buangkan airnya. Ambil sagu yang telah mendap tadi dan gaulkan bersama ubi kayu yang telah diperah tadi gaul hingga rata dan ketepikan.
4. Santan, gula, tepung jagung, telur,butter, vanilla dan garam di satukan. Dengan menggunakan whisker, kacau hingga sebati. Masak hingga panas sahaja (jangan biarkan mendidih). Campurkan adunan santan yang masih panas dengan ubi kayu tadi dan aduk hingga sebati. Masukkan pewarna kuning dan aduk lagi.
5. Tuangkan adunan ubi kayu tadi kedalam tin pembakar dan bakar selama 1 - 1/2 jam atau hingga permukaan kuih garing. Sejukkan dulu sebelum di potong.
Isi Ayam Dengan Sos Tiram & Cili Kering
Ingredients: 1/2 kg isi ayam (dada) 1 labu bawang besar (dipotong dadu) 3 ulas bawang putih (dicincang kasar) 3 cm halia (dihiris halus) 10-15 batang cili kering (digunting kecil2 lebihkurang 1 1/2 cm) 1 tin button/shitake mushroom (jika guna yang besar dipotong dua) 3 sudu besar sos tiram 2 sudu besar kicap pekat 2 sudu kecil tepung jagung 1 sudu kecil serbuk lada putih garam Directions: Hiriskan isi ayam tipis2 dan gaulkan bersama sedikit garam, lada putih dan tepung jagung dan perap lebih kurang 15 minit. Panaskan minyak dan goreng isi ayam selama lima minit dan angkat. Menggunakan minyak yang sama tumiskan bawang besar, bawang putih, halia dan cili kering sehingga bawang besar layu dan masukkan mushroom dan kacaulah lebih kurang 2-3 minit dan masukkan isi ayam yang telah digoreng tadi, sos tiram dan kicap pekat dan garam dan gaulkan sehingga sebati (tambahkan kicap pekat jika mahu warna lebih gelap) dan masak selama 5 - 8 minit lagi. PS* Hidangan ini agak kering. Jika tak suka kering jangan goreng isi ayam terlebih dahulu tetapi terus masukkan isi ayam yang tidak bergoreng. |

Portuguese Custard Tarts
Ingredients
- 1 cup milk
- 3 tablespoons cornstarch
- 1/2 vanilla bean
- 1 cup white sugar
- 6 egg yolks
- 1 (17.5 ounce) package frozen puff pastry, thawed
Directions
- Preheat oven to 375 degrees F (190 degrees C.) Lightly grease 12 muffin cups and line bottom and sides with puff pastry.
- In a saucepan, combine milk, cornstarch, sugar and vanilla. Cook, stirring constantly, until mixture thickens. Place egg yolks in a medium bowl. Slowly whisk 1/2 cup of hot milk mixture into egg yolks. Gradually add egg yolk mixture back to remaining milk mixture, whisking constantly. Cook, stirring constantly, for 5 minutes, or until thickened. Remove vanilla bean.
- Fill pastry-lined muffin cups with mixture and bake in preheated oven for 20 minutes, or until crust is golden brown and filling is lightly browned on top

Apam Balik
Dulu pernah buat pakai resepi lain tapi tak menjadi sebab kalau dah sejuk..keras..kalau campak kat dinding...dinding yang pecah...so bila terjumpa resepi ni semangat mula berkobar-kobar nak cuba lagi.
PS** Untuk apam balik ni aku gunakan kuali non-stick yang kecil sebab tak ada acuan dia tapi tetap jadi....
Bahan-bahan:
* 2 cawan tepung gandum
* ½ cawan gula
* 1 sudu teh soda bicarbonate
* 1 sudu teh baking powder
* Sedikit pewarna kuning
* 1 biji telur
* 1½ cawan air
* Sedikit minyak untuk mengoles
* Bahan tabur : Kacang tanah yang sudah dikisar + gula pasir
1. Pukul gula bersama telur hingga kembang,
2. Masukkan soda, bicarbonate, air dan pewarna kuning. Pukul lagi hingga sebati.
3. Masukkan tepung dan kacau lagi sehingga sebati dan tapiskan.
4. Oleskan minyak di permukaan kuali & tuangkan 1 senduk adunan tadi, kemudian nipiskan.
5. Biarkan seketika & sementara menunggu masak, taburkan bahan tabur di atas.
6. Apabila cukup masak, angkat dan dilipat dua sebelum dipotong.

Kek Span Gula Hangus (Kek Sarang Semut)
Semalam petang kta buat Kek Sarang Semut...mak mertua kita yang nak makan..dah lebih sebulan dia nak kek ni...barulah ni kita ada masa nak buat.....
So pagi tadi hubby pergi rumah dia kita suruhlah bawak sekali....fuhhh....lega sikit bila dah buat...takut-takut nanti dia kempunan pulak...
Kek Span Gula Hangus (Kek Sarang Semut)
450gm gula halus
120gm mentega
340ml air
10 biji kuning telur
7 biji putih telur
1 sudu kecil esen ros
1 sudu makan bicarbonate of soda
260gm tepung
1/2 tin susu pekat
Gula digoreng hingga kuning kecoklatan atas api yang kecil. Kemudian masukkan air dan mentega kacau hingga rata. Matikan api dan biarkan sejuk.
Telur, tepung, susu, biarbonate of soda dan esen rose dicampur dan gaul rata. Setelah itu dimasukkan air gula hangus yang telah sejuk tadi dan gaul lagi hingga rata dan tuang kedalam tin pembakar 11" x 11".
Tin pembakar hendaklah terlebih dahulu di sapu minyak di bawah dan tepi tin dan kemudian alaskan dengan aluminium foil agar kek tidak mudah hangus.
Bakar pada suhu 160 darjah selama 50 minit - 1 jam atau hingga masak.

Apple Pie With Cheese Topping
Description:
I bake this pie during the holiday and it was so easy, delicious and quite unique as it have biscuit like base and chewy topping.
Ingredients:
For the base:
1 cup butter, softened
1/2 cup confectioner's sugar (sugar powder)
2 1/2 cups sifted all-purpose flour
Apple Pie Filling:
10 medium size green apples - peel, core and cubed
3/4 cup brown sugar
1/2 cup water
2 tablespoons corn flour
1tablespoon ground cinnamon
In a medium pot mix all the ingredients and cook until apple is soft.
For topping:
2 cup shredded cheddar cheese
1 cup all-purpose flour
1/2 cups brown sugar
1 teaspoon ground cinnamon
Bubur Som-Som
Kuih lama yang pernah dilupakan...terutama pada bulan Ramadhan.....
Bahan-bahannya:
100g tepung beras
100g tepung jagung
1600ml santan
5 helai daun pandan
2 sudu teh garam
Sirap:
300g gula pasir
200ml air
5 helai daun pandan
sedikit warna merah (jika suka)
Directions:
Tepung beras, tepung jagung, santan dan garam disatukan dan gaulkan sehingga tidak bergentil dan tapiskan. Masak di atas api yang sederhana bersama daun pandan hingga pekat dan nampak berkilat (sentiasa dikacau). Tuangkan di dalam loyang atau acuan dan sejukkan sebelum dimasukkan ke dalam peti sejuk.
Sirap:
Campurkan ke semua bahan dan masak hingga mendidih. Sejukkan sebelum dimasukkan ke dalam peti sejuk.
Simple Donuts
Simple doughnut that you can make fresh in your own home. the dough may be sticky but with sufficient flour on your rolling board, that should not be a problem.
Ingredients:
2 1/2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon powder (optional)
1 cup milk
1 egg, beaten
1/4 cup butter, melted and cooled
2 teaspoon vanilla
oil for deep frying
Fine sugar for coating the doughnuts
Directions:
In a large bowl, stir together the flour, sugar, baking powder, salt and cinnamon. make a well in the centre and pour in the milk, egg, butter and vanilla. Mix well until blended. The dough will be very soft. Cover and refrigerate for about 1 to 2 hrs.
2. Heat oil. On well floured board, roll chilled dough to 1/2 inch thickness and use a doughnut cutter to cut out the dough and fry doughnuts right away.
3. Coat the still warm doughnuts with fine sugar.
Cheese N Garlic Scones
This is a very simple recipe. Best eaten while still warm. Aiman's favourite.
Ingredients:
2 cups self-rising flour
2 tablespoons (60g) butter
1 cup shredded cheddar cheese
1 teaspoon mince garlic (add more if you like or omit it if you don't)
1 cup milk
Directions:
1. Preheat oven to 425 degree F (220 degree c).
2. In a large bowl, sift flour. Rub in butter lightly with finger tips until until mixture resembles coarse breadcrumbs. Mix in garlic and cheese. Make a well in the centre of the mixture and pour in the milk. Gently mix, just until combined. knead briefly and lightly. Do not over knead the dough. Divide the dough into two balls.
3. Onto lightly floured board, pressed dough using your hand to form into 1 inch thick round and cut into 8 wedges. Place on lightly greased baking tins.
4. Bake for 15 to 20 minutes or until light brown.

Homemade Pancakes
We, who live on this part of the region always used instant pancake mix to make one, so when I came across this pancakes recipe, I decided to try to make my own pancake from scratch and the result was beautiful and you can put whatever you want in it like chocolate chips or banana and I would like to share this recipe with you..
Ingredients:
3 cups all-purpose flour
3 tablespoons sugar
3 teaspoon baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 1/2 cups milk or you can substitute 1/2 cup of milk to 1/2 cup of natural yogurt
3 eggs
1/3 cup butter, melted
Directions:
1. In a large bowl, combined flour, sugar, baking powder, baking soda and salt. In separate bowl, beat together milk, eggs and melted butter. Add the milk mixture to the flour mixture, using a wooden spoon, blend the mixture.
2. Heat a lightly oiled griddle. Pour 1/2 cup of the pancake mixture onto the griddle. Brown both side and it ready to be serve with maple syrup of course.

Cream cheese chocolate chips muffins
This muffin is my children all time favourite.
Ingredients:
1 package (250g) cream cheese, softened
1/4 cup (55g) butter
1 egg
1/2 cup cream (uht whipping cream)
1/2 teaspoon vanilla
2 cups all-purpose flour
1/2 cup sugar
3 teaspoon baking powder
1/2 cup chocolate chips
Directions:
1. Preheat oven to 400 degrees F (200 degrees C). Line cupcake paper liners into muffin tins
2. Beat cream cheese and butter together until well blended. beat in egg, cream and vanilla.
3. Combine the flour, sugar and baking powder. using wooden spoon or spatula, stir flour mixture into cream cheese mixture until flour is moistened. fold in chocolate chips. Spoon batter into prepared muffin tins filling them 3/4 full.
4. Bake for about 20 minutes.

Ni basic cheesecake so you all bolehlah taruh apa2 topping yang you all suka.
Kalau nak buat cheesecake ni..I advise you all buat pada malam sebelumnya sebab nak buat cheesecake ni memang tak susah tapi nak tunggu bila boleh makan tu yang susah..jadi kalau buat malam sebelum tidur masuk fridge..besok dah boleh makan...

10 pcs digestive biscuit break into small crumbs
2 tablespoons butter, melted
750g cream cheese, softened at room temperature
1 can sweetened condensed milk
4 eggs
300g sour cream
1 tablespoon all purpose flour
1 tablespoon vanilla extract
1 can pie filling (any flavour)
Directions:
1. Preheat oven to 175 deg. C (350 deg. F)
2. In a mixing bowl, combine the biscuit crumbs and the butter with your hands and pressed onto the bottom of a 9' springform pan.
3. In a large bowl, beat softened cream cheese until smooth. beat in condensed milk and mix until combined well. Add eggs 1 at a time, sour cream, vanilla and flour. Mix until smooth and pour mixture into the springform pan.
4. Bake for 50 mins then off the oven and let your cake to sit in the oven for another 2 hrs (without opening the door). Take out from the oven let it cool and chill it for at least 4 hrs.
5.Spread pie filling on top of the cake before serving.
Bread Pudding
If you just don't know what to do with your 3 - 4 days old bread..then this is a very good recipe to make good of the bread before it goes stale....and you can eat it on its own or serve it with vanilla ice-cream....mmmm..yum yum.....
Ingredients:
8 slices bread
2 tablespoons butter, melted
1/2 cups raisins (optional)
4 eggs, beaten
2 cups milk
3/4 cups white sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350 deg.F (175 deg.C). Grease a 8' baking pan.
2. Cut the bread into small cubes and put it in the baking pan. Drizzle melted butter over the bread. If desired sprinkle with raisins.
3. In a medium mixing bowl, combined eggs, milk, sugar,cinnamon & vanilla. beat until well mixed. pour over and slightly push down with a fork until bread is covered and soaking up the egg mixture. Let it stand for 10 minutes.
4. bake in preheat oven for 40 - 45 mins.
Chocolate Pound Cake
Description:
A dense chocolate cake which reminds me of Sara Lee Chocolate Pound cake...
Ingredients:
* 375g butter, softened
* 2 cups white sugar
* 5 eggs
* 2 teaspoons vanilla extract
* 2 teaspoons instant coffee granules dissolved in 1/4 cup hot water
* 1 cup milk
* 2 cups all-purpose flour
* 3/4 cup unsweetened cocoa powder
* 1/2 teaspoon baking powder
* 1 teaspoon salt
Directions:
1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Mix together the flour, cocoa, baking powder, and salt. Set aside.
2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the dissolved coffee and milk. Pour batter into prepared pan.
3. Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 20 minutes, then turn out onto a wire rack and cool completely.

Boos order lagi.....
Hari ni agak sibuk sikit sebab siapkan masakan yang Boos order untuk celebrate birthday colleague dia. Niari dia order brownies, ayam goreng & bee hoon goreng...
Alhamdulillah....rezeki...biar pun penat demi rezeki akan ku lakukan juga.....
Petang ni nak kena masak bee hoon goreng jugak pasal nanti hubby tanya pasal bee hoon goreng ni favourite dia...tadi masak cukup2 untuk Boos punya.....
